Motsunabe - Fukuoka’s Famous Dish, Loved throughout Japan
There are a wide variety of Japanese hot pot dishes, and Motsunabe is well known as Fukuoka’s specialty. If you go to an izakaya restaurant in Fukuoka, you can eat Motsunabe at a reasonable price, and if you go to a specialty restaurant, you can enjoy a more authentic one. It’s called Fukuoka’s soul food as many restaurants serve it in Fukuoka.
There are 3 main features of the food:
- Use beef giblets
- Use a lot of cabbage and chive (also add other ingredients such as tofu and burdock)
- Simmer 1 and 2 in a pot with soup
By using high-quality beef giblets, the flavor increases and vegetables will be even tastier.

There are 3 kinds of soups for Motsunabe
- Shoyu (soy sauce)
It’s a standard. I recommend it when you are not sure which one to choose. Vegetables and beef giblets match with soy sauce and very delicious.
- Miso
It gives a rich flavor and increases your appetite. Miso is the best for those of you who like to drink alcohol.
- Shio (salt)
A simple taste brings out the taste of vegetables and beef giblets. It’s recommended for those of you who already have tried the other flavor.
*Some restaurants offer their original soup such as spicy soup other than the above.
